3 Seafood Lasagna
This indulgent Italian lasagna is a complete one-dish meal, perfect for a special occasion. It layers cooked lasagna noodles with a creamy mixture of ricotta cheese and egg, plus a rich seafood filling made with shrimp, bay scallops, imitation crab and sliced mushrooms in an Alfredo sauce. The assembled dish is topped with shredded Italian cheese and baked until thoroughly heated and golden on top. It serves nine people and requires about 120 minutes to prepare and cook.
Ingredients
- 16 ounces lasagna noodles
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 lb baby bella mushroom, sliced
- 32 ounces alfredo sauce
- 1 lb medium shrimp, peeled and deveined
- 1 lb bay scallop
- 1 lb imitation crabmeat, chopped
- 20 ounces ricotta cheese
- 1 egg, beaten
- black pepper
- salt
- 6 cups Italian cheese blend, shredded
Method
- Set your oven to heat to 350 degrees.
- Boil a large pot of water, cook the pasta for 8 minutes, then drain it.
- Warm the oil in a large pan, then cook the garlic and mushrooms until they are tender.
- Pour in the Alfredo sauce, then add the shrimp, scallops and crabmeat, letting it all simmer for 8 minutes. Season with salt and pepper.
- Mix together the ricotta cheese, beaten egg, pepper and salt in a separate bowl.
- Spray a 13 x 9 inch pan with nonstick spray. Place a layer of noodles on the bottom, then spread over the ricotta mixture, followed by the Alfredo seafood mixture, and finish with a layer of shredded cheese.
- Continue building layers until all components are used. Position the baking pan on a sheet pan to catch any potential overflow.
- Bake the lasagna without a cover for 45 minutes.
- Place foil over the top and continue baking for a further 10-15 minutes.
