3 P's Salad (Peas, Pickle, Peanut)
This traditional Oklahoma salad, known as the 3 P's Salad, brings together sweet peas, peanuts, and sweet gherkins. The ingredients are combined with a simple, creamy dressing made from pickle juice, mustard, sugar, and cream. After a brief rest to let the sugar dissolve, the salad is served at room temperature. It's a straightforward, flavourful vegetable dish that comes together in about 25 minutes.
Ingredients
- 1 (15 ounce) can sweet peas
- 3 -4 small sweet gherkins
- 1 tablespoon sweet pickle juice
- 1/2-3/4 cup unsalted peanuts
- 1 tablespoon mustard
- 1 tablespoon sugar
- 1/2 cup cream (or half n'half)
Method
- Drain the can of sweet peas and transfer them to a mixing bowl.
- Process the unsalted peanuts and sweet gherkins in a food processor until they achieve a gravel-like texture, then add this mixture to the bowl with the peas.
- Stir the tablespoon of sweet pickle juice into the bowl.
- In a separate container, whisk together the mustard, sugar, and cream until combined.
- Let the dressing mixture stand for 10-15 minutes so the sugar can fully dissolve.
- Pour the prepared dressing over the combined pea, peanut, and pickle ingredients and mix everything together.
- Serve the completed salad at room temperature.
