This colourful Italian pasta dish is a family favourite, adapted from a vegetarian version. Strips of green, red, and yellow bell peppers are cooked with onion, mushrooms, and garlic, then combined with a sweet and tangy sauce of red wine vinegar and sugar. It's tossed with al dente penne pasta and can include optional Italian sausage for a heartier meal. Fresh basil adds a final aromatic touch. It serves 4 to 6 people.

3 Pepper Pasta

Ingredients

  • 1 green bell pepper, cut into strips
  • 1 red bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 red onion
  • 1 cup mushroom, sliced
  • 1 lb Italian sausage (optional)
  • 1 tablespoon basil
  • 1 tablespoon sugar
  • 3 tablespoons red wine vinegar
  • 1 lb penne pasta, cooked al dente

Method

  1. If using, brown the sausage in a skillet, crumbling it with a fork. Once cooked, remove it from the pan and set aside, discarding any excess grease.
  2. Heat the olive oil in a large skillet. Cook the red onion until it reaches your preferred level of tenderness.
  3. Introduce the sliced mushrooms and minced garlic to the skillet and cook them for 3-4 minutes.
  4. Add the strips of green, red, and yellow bell pepper and cook until they are as tender as you like.
  5. Once the vegetables are cooked, stir in the red wine vinegar and sugar. Add the cooked sausage back into the skillet if you are using it.
  6. Incorporate the basil at this stage. use dried basil if that's what you have, or add fresh basil right at the end.
  7. Combine the entire skillet contents with the cooked al dente penne pasta. It can be finished with a topping of grated parmesan cheese.
