3 Pepper Pasta
This colourful Italian pasta dish is a family favourite, adapted from a vegetarian version. Strips of green, red, and yellow bell peppers are cooked with onion, mushrooms, and garlic, then combined with a sweet and tangy sauce of red wine vinegar and sugar. It's tossed with al dente penne pasta and can include optional Italian sausage for a heartier meal. Fresh basil adds a final aromatic touch. It serves 4 to 6 people.
Ingredients
- 1 green bell pepper, cut into strips
- 1 red bell pepper, cut into strips
- 1 yellow bell pepper, cut into strips
- 3 tablespoons olive oil
- 2 garlic cloves, minced
- 1 red onion
- 1 cup mushroom, sliced
- 1 lb Italian sausage (optional)
- 1 tablespoon basil
- 1 tablespoon sugar
- 3 tablespoons red wine vinegar
- 1 lb penne pasta, cooked al dente
Method
- If using, brown the sausage in a skillet, crumbling it with a fork. Once cooked, remove it from the pan and set aside, discarding any excess grease.
- Heat the olive oil in a large skillet. Cook the red onion until it reaches your preferred level of tenderness.
- Introduce the sliced mushrooms and minced garlic to the skillet and cook them for 3-4 minutes.
- Add the strips of green, red, and yellow bell pepper and cook until they are as tender as you like.
- Once the vegetables are cooked, stir in the red wine vinegar and sugar. Add the cooked sausage back into the skillet if you are using it.
- Incorporate the basil at this stage. use dried basil if that's what you have, or add fresh basil right at the end.
- Combine the entire skillet contents with the cooked al dente penne pasta. It can be finished with a topping of grated parmesan cheese.
