3 Pepper Chili
This robust three pepper chilli combines beef with kidney, black, and chilli beans in a slow cooker. A trio of chilli powders and aromatic spices create a deeply flavoured base. The dish is simmered until everything is beautifully combined, resulting in a comforting meal perfect for sharing. It yields enough for a gathering, ready in just over an hour of cooking time.
Ingredients
- 1 (8 ounce) can kidney beans (drained)
- 1 (8 ounce) can black beans
- 1 (8 ounce) can chili beans
- 1 (8 ounce) can diced tomatoes (small or large)
- 1 (14 1/2 ounce) can beef broth
- 2 lbs beef (or sub 1lb with sausage)
- 1 (1 1/3 ounce) package of lawry's fajita seasoning mix
- 2 garlic cloves, minced
- 1 bell pepper (choose your color)
- 2 tablespoons chili powder
- 1 tablespoon dried chipotle powder
- 1 tablespoon dried ancho chile powder
- 1/4 teaspoon red cayenne pepper, ground (add more or less for spice)
- 1/4 teaspoon paprika
- 1/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/4 teaspoon course black pepper
- 1/3 teaspoon salt
Method
- Place all the canned beans and diced tomatoes into a slow cooker and set it to high.
- In a separate skillet, cook the meat and chopped bell pepper until fully browned.
- Remove any excess fat from the cooked meat mixture.
- Sprinkle the fajita seasoning over the meat, stirring and adding a little water to help it coat evenly.
- Transfer the seasoned meat and peppers into the slow cooker with the beans.
- Add all the remaining ground spices and powders to the pot and stir everything together.
- Allow the chilli to cook on high for 1 hour, then reduce the heat to low and serve.
