Ingredients

  • 3 cups granulated sugar
  • 3/4 cup light corn syrup
  • 3/4 cup water
  • 1/8 teaspoon salt
  • 3 egg whites
  • 1/3 cup semi-sweet chocolate chips
  • 24 ounces milk chocolate chips

Method

  1. Place the sugar, corn syrup, water and salt into a large saucepan. Set it over heat and stir until the mixture reaches a boil, using a candy thermometer to check the temperature.
  2. Whip the egg whites in a non-plastic bowl until they hold stiff peaks.
  3. Once the sugar syrup hits 270 degrees F, take the pan off the heat. Slowly pour the hot syrup into the whipped egg whites while mixing on a low speed. Keep mixing until the texture resembles a firm dough, which could take up to 20 minutes.
  4. Mix in the semisweet chocolate chips. Ensure the nougat is already dough-like before adding the chocolate, as it will not thicken further afterwards.
  5. Transfer the thickened nougat into a greased 9x9-inch pan and press it down evenly.
  6. Place the pan in the refrigerator to set for about 30 minutes. Remove and slice the slab in half lengthwise. Then make 7 cuts across to form 14 individual bars.
  7. Melt the milk chocolate chips in a microwave, heating for 2 minutes at half power and stirring midway. Avoid overheating. Using a fork, dip each nougat bar into the melted chocolate to coat it fully, then set it on wax paper.
