This traditional Mexican dessert, known as Tres Leches or Three Milk Cake, consists of a delicate vanilla sponge. After baking, the cake is thoroughly soaked with a sweet mixture of three different milks. It is then finished with a thick and creamy frosting made from cream cheese and whipped cream. The result is a wonderfully moist and indulgent treat, ideal for serving a crowd. The recipe yields one 9x13-inch cake, which typically serves about 10 people.

Tres Leches Cake

Ingredients

  • 6 eggs, separated
  • 2 cups white sugar
  • 2 cups all-purpose flour
  • 6 tablespoons milk
  • 0.25 cup butter, melted
  • 4 teaspoons vanilla extract
  • 4 teaspoons baking powder
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (12 ounce) can evaporated milk
  • 1 cup half-and-half
  • 1 (4 ounce) package cream cheese, softened
  • 2 cups heavy whipping cream

Method

  1. Set your oven to 350 degrees F (175 degrees C). Prepare a 9x13-inch baking pan by greasing and flouring it.
  2. Using an electric mixer, whip the egg whites in a large bowl until fluffy. Slowly add the sugar and continue beating until soft peaks form. Gradually incorporate the flour, then beat in the milk, egg yolks, melted butter, 4 teaspoons vanilla extract, and baking powder, ensuring each addition is fully combined before adding the next. Transfer the batter to your prepared pan.
  3. Place the pan in the oven and bake for no more than 30 minutes, until the top is browned and crusty. Let the cake cool in its pan for 10 minutes, then carefully take it out to cool completely.
  4. In a bowl, combine the sweetened condensed milk, evaporated milk, and half-and-half by whisking them together. Pour half of this milk mixture into a dish that is deeper and longer than the cake. Place the fully cooled cake into the dish. Use a fork to score deep lines across the top of the cake. Pour the rest of the milk mixture over the cake, letting it soak in.
  5. In another bowl, beat the softened cream cheese with the remaining 1 teaspoon vanilla extract using an electric mixer until soft and fluffy. Gradually add the heavy whipping cream while beating, continuing until the frosting becomes thick and spreadable. Spread this frosting evenly over the top of the soaked cake.
