3 Meat Stromboli
This homemade stromboli features a soft, yeasted dough rolled with layers of salami, ham, and pepperoni, plus provolone and mozzarella cheeses. The dough is infused with garlic and herbs before baking to a golden finish. The recipe yields two substantial loaves, ideal for feeding a small group. It requires about 85 minutes from start to finish, including dough rising time.
Ingredients
- 2 1/2 cups all-purpose flour
- 1/4 ounce yeast
- 1 cup water (warm)
- 1 tablespoon sugar
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/4 lb thin deli salami
- 1/4 lb thin deli ham
- 1/4 lb thin deli pepperoni
- 1/4 lb thin deli provolone cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 1/2 head garlic
- 1 tablespoon dried oregano
- 1 teaspoon dried parsley flakes
- 1 teaspoon pepper
- 1 egg yolk (beaten)
Method
- Combine the warm water with the sugar and yeast, then leave it for 10 minutes until the surface becomes frothy.
- As the yeast activates, add the flour and salt to a food processor fitted with a dough blade or to a stand mixer bowl.
- Pour the frothy yeast mixture into the flour and knead to form a dough ball. Incorporate the olive oil and mix for 1 min longer. Move the dough to a large bowl, cover it with plastic wrap, and allow it to rest for 45min to 1 hours until it has doubled.
- For the stromboli assembly, separate the risen dough into two equal portions.
- Take one portion and roll it out on a surface to form a 12" X 15" rectangle.
- Slice half a head of garlic and press the pieces into the surface of the rolled dough.
- Scatter your chosen dried herbs evenly across the dough.
- Lay out half of the salami, ham, pepperoni, and provolone cheese slices to cover the dough.
- Top the arranged meats and cheese with a sprinkling of shredded mozzarella.
- Carefully roll the rectangle up from the long side, like a jelly roll, pinching the seam and ends to seal.
- Put the rolled loaf seam-side down onto a greased baking tray. Repeat the process with the second dough portion.
- Lightly brush the loaves with the beaten egg yolk, then scatter grated parmesan cheese over the top. You may also add a little pepper and salt now.
- Bake in an oven preheated to 375 degrees for 30-35 min, or until the crust turns a light golden brown. Allow the stromboli to stand for 5 min before you cut it into slices.
