3-Layer Dark Chocolate Cake

Ingredients

  • 2 cups boiling water
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon unstant instant coffee granules (for a more intense flavor use 1 teaspoon)
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 2 cups white sugar
  • 1/4 cup brown sugar, packed
  • 2 teaspoons vanilla
  • 4 large eggs

Method

  1. Preheat the oven to 350 degrees F.
  2. Position a rack on the second-lowest level of the oven.
  3. Prepare three 9-inch round cake pans by greasing them and lining the bases with parchment paper.
  4. Combine the boiling water, cocoa powder, and coffee granules in a heatproof bowl, stirring until smooth, then leave to cool to room temperature for about 20 minutes.
  5. Sift the all-purpose flour together with the baking soda, baking powder, and salt in a separate bowl and set it aside.
  6. Using a large bowl, beat the softened butter with the white sugar, brown sugar, and vanilla until light and fluffy.
