3-Layer Dark Chocolate Cake
This impressive dark chocolate cake is designed to be baked in three separate pans for the best results. The batter combines a cooled mixture of cocoa and coffee with creamed butter and sugars, then is divided and baked. The process yields a moist, flavourful dessert perfect for a gathering.
Ingredients
- 2 cups boiling water
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon unstant instant coffee granules (for a more intense flavor use 1 teaspoon)
- 2 3/4 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup butter, softened
- 2 cups white sugar
- 1/4 cup brown sugar, packed
- 2 teaspoons vanilla
- 4 large eggs
Method
- Preheat the oven to 350 degrees F.
- Position a rack on the second-lowest level of the oven.
- Prepare three 9-inch round cake pans by greasing them and lining the bases with parchment paper.
- Combine the boiling water, cocoa powder, and coffee granules in a heatproof bowl, stirring until smooth, then leave to cool to room temperature for about 20 minutes.
- Sift the all-purpose flour together with the baking soda, baking powder, and salt in a separate bowl and set it aside.
- Using a large bowl, beat the softened butter with the white sugar, brown sugar, and vanilla until light and fluffy.
- Incorporate the eggs into the butter mixture, beating thoroughly for about 3-4 minutes.
- Alternately add the prepared flour mixture and the cooled cocoa mixture to the wet ingredients, mixing until just combined.
- Distribute the cake batter equally among the three prepared pans.
- Bake for about 25-35 minutes, or until a tester inserted into the centre comes out clean.
