Sweet Potato Pizza Crust

Ingredients
- 1 medium sweet potato, peeled
- 2/3 cup rolled oats
- 1 egg
- 1/2 teaspoon salt
- a pinch of garlic powder
- 1 tablespoon olive oil
Method
- Set your oven to 400 degrees. Process the peeled sweet potato and rolled oats in a food processor until they form a fine texture. Incorporate the egg, salt and garlic powder, then pulse the mixture once more to combine everything into a loose, thick batter.
- Place the mixture onto a baking sheet or round pan lined with parchment paper. Use your hands to press and shape it into a crust, aiming for a thickness between 1/4 and 1/2 inch. You can form two smaller individual bases or one larger one.
- Bake the crust for 25-30 minutes until the surface feels dry. Take it out and allow it to cool slightly before flipping it over so the dry side is down. Carefully peel away the parchment paper, brush the top with olive oil, and return it to the oven for a further 5-10 minutes to crisp up.
