3-Ingredient Sushi Rice

  • 1 cup sushi rice
  • 1 cup water
  • 1 tablespoon seasoned rice vinegar

Method

  1. Ensure you use a sushi rice variety, such as Kagayaki or Koshihikari.
  2. Place the rice in a bowl, cover it with water, and note the cloudy water. Drain and repeat rinsing until the water runs clear.
  3. Combine 1 cup of the rinsed rice with 1 cup of water in a pot and bring it to a boil.
  4. Once boiling, lower the heat to a simmer and cover the pot with a lid.
  5. Allow the rice to cook for about 15minutes, until it has absorbed all the water. Stir it now and then to stop it from sticking to the pot.
  6. Take the pot off the heat and leave the rice to stand, still covered, for 10min.
  7. Transfer the cooked rice to a flat tray, spreading it out thinly so it cools rapidly.
  8. Drizzle 1 tablespoon of seasoned rice vinegar over the spread rice.
  9. If you only have plain rice vinegar, mix 1 tablespoon of it with 1 tablespoon of sugar and 1 teaspoon of salt. Warm this mixture in a pan or microwave to dissolve the solids.
  10. Gently fold the vinegar through the rice with a spoon while fanning the rice to help it cool down quickly.
  11. Check the rice has a glossy appearance. add a touch more vinegar if it does not.
  12. With damp hands, shape the rice into a ball. It should hold together but still separate into distinct grains.
