Shortbread Cookie Sandwich with Dulce De Leche

Ingredients

  • 225 g / 8 oz (2 sticks) unsalted butter (, softened)
  • 1/2 cup icing sugar ((powdered sugar), plus extra for dusting work surface)
  • 2 cups plain flour
  • Dulce De Leche ((see Slow Cooker Dulce De Leche (Caramel Sauce) - 1 ingredient recipe))

Method

  1. Preheat your oven to 180C/350F.
  2. Place a sheet of parchment paper onto a baking tray, using a second tray if needed.
  3. Mix the softened butter and icing sugar together in a bowl until smooth.
  4. Stir in the flour until a crumbly dough forms, then use your hands to bring it together into a ball.
  5. Sprinkle icing sugar onto your work surface and place the dough on top.
  6. Press the dough to about 1cm / 1/2” thick, cover with baking paper, and roll to 0.5cm / 1/4” thickness.
  7. Cut out rounds using a 6.5cm/2.5” cookie cutter and transfer them to the prepared tray.
  8. Gather the leftover dough, roll it out again, and cut more rounds to make 16 cookies in total.
  9. Bake for 15 to 18 minutes until they are a pale golden brown with slightly darker edges.
  10. Take the trays from the oven and allow the cookies to cool completely on them.
  11. Once cool, spread dulce de leche onto half the cookies and top with the remaining ones to form sandwiches.
