Parmesan Cookies
These savoury Italian biscuits require only three basic ingredients: butter, flour, and Parmesan cheese. The dough is chilled before being rolled out, cut into shapes, and baked until crisp. The result is a delightful appetiser or snack that pairs wonderfully with a glass of wine. The entire process takes about 100 minutes, yielding approximately 36 cookies.
Ingredients
- 1.25 cups all-purpose flour
- 0.5 cup salted butter, softened
- 1.6666667461395 cups grated Parmesan cheese
Method
- Combine the flour and butter. Mix in the Parmesan cheese until a firm dough forms. Shape it into a ball, wrap it, and chill in the refrigerator for at least 1 hour or overnight.
- Set your oven to 350 degrees F (175 degrees C). Prepare a baking sheet by lining it with parchment paper.
- Roll the chilled dough between two sheets of parchment paper to a thickness of 1/8 to 1/4-inch. Cut out circles using a small cutter or glass. Re-roll the scraps and cut more circles. Arrange them on your lined baking sheet.
- Bake in the preheated oven for 10 to 15 minutes. Once baked, move the cookies to a wire rack to cool completely before you serve them.
