This classic American appetiser combines just three ingredients for a crowd-pleasing bite. Medjool dates are stuffed with crumbled blue cheese, then wrapped in partially cooked bacon and baked until crisp. The result is a perfect balance of sweet, salty, and creamy flavours. Ingredients

  • 15 center-cut bacon slices, cut in half crosswise
  • 30 pitted Medjool dates (about 2-inches each), soaked in warm water for 5 minutes, then drained
  • 4 ounces blue cheese, crumbled (about 3/4 cup)
  • Metal or wooden toothpicks (see notes)

Method

  1. Position your oven racks to the upper-middle and lower-middle levels and heat the oven to 400°F (205 °C). Prepare three foil-lined rimmed baking sheets. Lay the bacon halves in one layer across two of the sheets. Bake both trays together for 8 to 10 minutes until the bacon edges curl and fat renders, swapping their positions halfway. Allow to cool on the sheets for about 5 minutes until you can handle them.
  2. As the bacon cooks, take each date and use a paring knife to make a lengthwise slit, creating an opening without cutting completely through.
  3. Fill each date with approximately 3/4 teaspoon of the crumbled blue cheese, pressing it in gently before pinching the date closed.
  4. Take one piece of the cooled bacon and wrap it around each stuffed date. You can use a toothpick to secure it if necessary, then place them seam-side down on the third prepared baking sheet.
  5. Bake the tray on the lower-middle rack for 12 to 14 minutes until the bacon is crisp and browned, rotating the sheet once during cooking. Allow them to rest for 5 minutes before you serve.
