3 Ingredient Chocolate Cake
This is a wonderfully rich and flourless chocolate dessert requiring only three core ingredients. Adapted from a popular minimalist cookbook, it yields a decadent and moist cake. The recipe is straightforward, using melted chocolate and butter folded into whipped eggs. It bakes in 20 minutes and is excellent on its own or accompanied by whipped cream and fresh berries for serving.
Ingredients
- 16 ounces good quality semisweet chocolate, cut into small pieces
- 10 tablespoons unsalted butter, cut into small pieces
- 5 extra large eggs
- 1 pinch salt
Method
- Set your oven to 375. Prepare an 81/2" springform pan by lining the base with parchment and coating it with non-stick spray. Melt the chocolate and butter together using a double boiler, stirring until smooth, or microwave them in a suitable bowl.
- Place the eggs and a pinch of salt into an electric mixer's bowl. Whisk them for 8 minutes until the volume has roughly tripled.
- Using a rubber spatula, gently fold the melted chocolate mixture into the whipped eggs until fully combined. Transfer this batter to the prepared pan and bake for 20 minutes.
- The middle of the cake will remain moist. Take it out of the oven and allow it to cool for 30 minutes before taking it out of the pan and cutting into slices.
