Ingredients

  • 2 cups (280g) blueberries*
  • 2 Tablespoons agave or honey*
  • 2 cups vanilla Greek yogurt (or any flavor)

Method

  1. Process the blueberries in a blender or food processor until they achieve a smooth, liquid consistency similar to a thick smoothie.
  2. Transfer the blueberry purée to a large mixing bowl. Incorporate the agave or honey, then add the yogurt. Fold the ingredients together gently to maintain distinct swirls of white and blue for a tie-dye appearance. The final mixture will be quite thick. You may adjust the sweetness with extra agave or honey if desired.
  3. Divide the mixture evenly between the popsicle moulds. If your mould accommodates sticks, insert them now. Otherwise, place the moulds in the freezer for 2 hours before adding a wooden stick to the centre of each. Freeze for another 4-6 hours, or leave overnight until completely solid.
  4. To release the popsicles, briefly hold the mould under warm running water. They are best enjoyed straight away on a hot day.
