3 Ingredient Blueberry Yogurt Swirl Popsicles
These delightful frozen treats require only three basic ingredients. Fresh blueberries are blended and combined with Greek yogurt and a touch of natural sweetener, creating a protein-packed dessert. The mixture is swirled rather than fully blended for a beautiful tie-dye effect before being frozen in popsicle moulds. Ideal for a refreshing, gluten free snack on a sunny afternoon.
Ingredients
- 2 cups (280g) blueberries*
- 2 Tablespoons agave or honey*
- 2 cups vanilla Greek yogurt (or any flavor)
Method
- Process the blueberries in a blender or food processor until they achieve a smooth, liquid consistency similar to a thick smoothie.
- Transfer the blueberry purée to a large mixing bowl. Incorporate the agave or honey, then add the yogurt. Fold the ingredients together gently to maintain distinct swirls of white and blue for a tie-dye appearance. The final mixture will be quite thick. You may adjust the sweetness with extra agave or honey if desired.
- Divide the mixture evenly between the popsicle moulds. If your mould accommodates sticks, insert them now. Otherwise, place the moulds in the freezer for 2 hours before adding a wooden stick to the centre of each. Freeze for another 4-6 hours, or leave overnight until completely solid.
- To release the popsicles, briefly hold the mould under warm running water. They are best enjoyed straight away on a hot day.
