3 Day Sweet Pickles
This recipe details a classic three-day process for creating sweet pickles. Cucumbers are first brined in a saltwater solution. After draining, they are boiled in a vinegar mixture before being packed into jars. A sweet syrup of sugar, vinegar and allspice is then heated and poured over the pickles, with a pinch of alum added to each jar before sealing. The total preparation time is 105 minutes, not including the multi-day brining period.
Ingredients
- 5 cucumbers (just a guess here)
- 1 gallon water
- 1 cup salt
- 3 cups sugar
- 4 cups vinegar
- 1 cup water
- 1/2 teaspoon allspice
- 1 pinch alum, as needed
Method
- For the first three days, submerge the cucumbers in a mixture of 1 gallon water and 1 cup salt.
- On the third day, drain the pickles and rinse them thoroughly.
- Combine 2 cups of vinegar with 1 cup water and pour this over the drained pickles.
- Bring the pickles in the vinegar mixture to a boil.
- Transfer the boiled pickles into clean jars.
- In a separate pan, mix together 3 cups sugar, 2 cups vinegar and 1/2 teaspoon allspice.
- Heat the sugar and vinegar mixture until it is warm.
- Pour the heated syrup over the pickles already in the jars.
- Add a pinch of alum to every jar.
- Seal the jars tightly to finish.
