3 Day Chili
This recipe earns its name from the three-day process it requires. The first day is for preparing the pulled pork, the second involves assembling and slow-cooking the chilli with ingredients like beef stew meat, Italian sausage, black beans, and roasted poblano pepper. The chilli then rests overnight in the refrigerator, allowing the flavours to develop fully before being reheated and served on the third day. The result is a deeply flavoured, hearty dish.
Ingredients
- 1 cup beef broth
- 14 1/2 ounces fire roasted diced tomatoes
- 4 ounces tomato sauce
- 7 ounces chopped green chilies
- 14 1/2 ounces black beans
- 29 ounces chili beans
- 3 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon unsweetened cocoa powder
- 1 teaspoon dried oregano
- 1/2 teaspoon fennel seed
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1 tablespoon sugar
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1/2 green bell pepper, chopped
- 1/2 large yellow onion, chopped
- 2 chipotle chiles in adobo
- 1 poblano pepper
- 1 lb beef stew meat, cut in small cubes
- 1/4 cup flour
- 1 lb hot Italian sausage
- 1 1/2 cups pulled pork
Method
- Preheat your oven's broiler to 500 degrees.
- Place the poblano pepper under the broiler, turning it frequently until the skin is blackened and charred.
- Transfer the roasted pepper into a brown paper bag and seal it to allow the pepper to sweat.
- Switch your crockpot to its low heat setting.
- Combine the initial fifteen ingredients from the list in the crockpot, stirring them together thoroughly.
- Warm a quantity of olive oil in a large skillet.
- Cook the minced garlic, chopped onion, and chopped green bell pepper in the skillet for 4-5 minutes.
- Tip the sauteed vegetables into the crockpot.
- Take the poblano from the paper bag, peel off the blackened skin, chop the flesh, and add it to the crockpot.
- Coat the beef stew meat pieces in flour and brown them in the skillet, adding more oil if needed.
- Transfer the browned beef to the crockpot.
- Cook the Italian sausage in the skillet until browned, then add it to the crockpot.
- Stir the prepared pulled pork into the crockpot mixture.
- Allow the chilli to cook in the crockpot for 8-10 hours.
- Once the cooking time is complete, let the crockpot cool before placing it in the refrigerator overnight.
- Approximately 2 hours before you plan to serve, take the crockpot from the fridge, set it to low, and warm the chilli until it is heated through.
