3-Citrus Hollandaise Sauce

Ingredients

  • 8 tablespoons unsalted butter
  • 2 tablespoons fresh lime juice
  • 2 teaspoons fresh lemon juice
  • 1 pinch salt
  • 4 large egg yolks
  • 1 dash hot red pepper sauce
  • 2 tablespoons fresh orange juice

Method

  1. Combine the unsalted butter, fresh lime juice, fresh lemon juice, and a pinch of salt in a bowl suitable for the microwave.
  2. Heat the bowl in the microwave on HIGH power for about 1 minute to melt the butter.
  3. Give the mixture a good whisk to help it cool down a little.
  4. Introduce the large egg yolks to the bowl and whisk everything together until fully combined.
  5. Cover the bowl with plastic wrap and microwave it on Medium (50%) power for 15 seconds.
  6. Remove the wrap and whisk the contents again until smooth.
  7. Repeat the process of microwaving for 15 seconds on Medium (50%) power and whisking two more times, until the sauce has thickened properly.
  8. Stir in the dash of hot red pepper sauce and the fresh orange juice with a whisk.
  9. Present the sauce while it is still warm.
