3-Citrus Hollandaise Sauce
This recipe creates a classic hollandaise sauce with a bright twist from three different citrus juices. Using a microwave simplifies the process, making it a quick and accessible sauce. It results in a creamy, emulsified condiment with a balanced tangy flavour. Ideal for drizzling over eggs Benedict, steamed asparagus, or grilled fish for an elegant touch.
Ingredients
- 8 tablespoons unsalted butter
- 2 tablespoons fresh lime juice
- 2 teaspoons fresh lemon juice
- 1 pinch salt
- 4 large egg yolks
- 1 dash hot red pepper sauce
- 2 tablespoons fresh orange juice
Method
- Combine the unsalted butter, fresh lime juice, fresh lemon juice, and a pinch of salt in a bowl suitable for the microwave.
- Heat the bowl in the microwave on HIGH power for about 1 minute to melt the butter.
- Give the mixture a good whisk to help it cool down a little.
- Introduce the large egg yolks to the bowl and whisk everything together until fully combined.
- Cover the bowl with plastic wrap and microwave it on Medium (50%) power for 15 seconds.
- Remove the wrap and whisk the contents again until smooth.
- Repeat the process of microwaving for 15 seconds on Medium (50%) power and whisking two more times, until the sauce has thickened properly.
- Stir in the dash of hot red pepper sauce and the fresh orange juice with a whisk.
- Present the sauce while it is still warm.
