3 Cheese Spinach Lasagna With Tofu

Ingredients
- 3 (16 ounce) jars spaghetti sauce
- 1 1/2 cups water
- 2 bay leaves
- 1 tablespoon dried oregano leaves, crushed
- 1/2 tablespoon ground marjoram
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 lb tofu, drained & crumbled
- 4 cups mozzarella cheese, shredded
- 32 ounces cottage cheese or 32 ounces ricotta cheese
- 1/4 cup dried parsley
- 2 lbs fresh spinach, chopped
- 1 lb lasagna noodle (uncooked)
- 1/4 cup parmesan cheese, grated
Method
- Heat your oven to 350°F.
- Boil the spaghetti sauce with water, then add the bay leaves, oregano, marjoram, salt and pepper if using. Let it simmer until slightly runny.
- In a separate large bowl, mix together the crumbled tofu, shredded mozzarella, cottage cheese and dried parsley.
- To assemble, lightly coat two 13x9x2 inch pans. Start with a thin layer of sauce. Add a single layer of uncooked noodles. Spread one quarter of the cheese mixture over the noodles in each pan. Scatter one quarter of the spinach on top, then pour over one quarter of the sauce.
- Build the layers again in the same order, finishing with a final layer of sauce. Sprinkle the grated Parmesan cheese over the top.
- Seal the pans tightly with foil and bake at 350F for 1 hour.
