3 Cheese Potatoes
This indulgent potato bake is a crowd-pleasing side dish. Sliced potatoes are layered with chopped onions, crumbled bacon and a trio of cheeses including sharp cheddar, mozzarella and parmesan. The layers are seasoned and moistened with milk before being covered and baked until the potatoes become perfectly tender. It yields a hearty and flavourful result ideal for gatherings.
Ingredients
- 6 large potatoes, sliced 1/4 inch thick
- 2 medium onions, chopped
- 1/3 cup parmesan cheese, grated
- 1 cup sharp cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1 lb bacon, cooked and crumbled
- 1/4 cup butter, cubed
- 1 tablespoon chives, minced
- 1 -2 teaspoon seasoning salt
- 1/2 teaspoon pepper
- 2 tablespoons flour
- 1 cup milk
Method
- Lightly grease a 2 1/2 quart casserole dish. Arrange half of the sliced potatoes in the base, followed by half of the chopped onions and half of the crumbled bacon.
- Sprinkle one tablespoon of flour over this layer, along with half of the seasoning salt and pepper.
- Scatter half of each type of cheese (parmesan, cheddar and mozzarella) evenly over the top.
- Create a second identical layer with the remaining potatoes, onions and bacon.
- Again, sprinkle with the remaining flour, seasoning salt and pepper.
- Finish by topping with the rest of all three cheeses.
- Sprinkle the minced chives over the cheese layer.
- Pour one cup of milk evenly over the entire assembled dish.
- Cover the casserole dish with a lid or foil. Place in an oven preheated to 375 degrees and bake for 1 to 1 1/2 hours, until the potatoes are tender when pierced.
