This indulgent potato bake is a crowd-pleasing side dish. Sliced potatoes are layered with chopped onions, crumbled bacon and a trio of cheeses including sharp cheddar, mozzarella and parmesan. The layers are seasoned and moistened with milk before being covered and baked until the potatoes become perfectly tender. It yields a hearty and flavourful result ideal for gatherings.

3 Cheese Potatoes

Ingredients

  • 6 large potatoes, sliced 1/4 inch thick
  • 2 medium onions, chopped
  • 1/3 cup parmesan cheese, grated
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 lb bacon, cooked and crumbled
  • 1/4 cup butter, cubed
  • 1 tablespoon chives, minced
  • 1 -2 teaspoon seasoning salt
  • 1/2 teaspoon pepper
  • 2 tablespoons flour
  • 1 cup milk

Method

  1. Lightly grease a 2 1/2 quart casserole dish. Arrange half of the sliced potatoes in the base, followed by half of the chopped onions and half of the crumbled bacon.
  2. Sprinkle one tablespoon of flour over this layer, along with half of the seasoning salt and pepper.
  3. Scatter half of each type of cheese (parmesan, cheddar and mozzarella) evenly over the top.
  4. Create a second identical layer with the remaining potatoes, onions and bacon.
  5. Again, sprinkle with the remaining flour, seasoning salt and pepper.
  6. Finish by topping with the rest of all three cheeses.
  7. Sprinkle the minced chives over the cheese layer.
  8. Pour one cup of milk evenly over the entire assembled dish.
  9. Cover the casserole dish with a lid or foil. Place in an oven preheated to 375 degrees and bake for 1 to 1 1/2 hours, until the potatoes are tender when pierced.
