3-Cheese Macaroni and Cheese

Ingredients

  • 1 tablespoon salt, plus more for pasta water
  • 1 pound large elbow macaroni
  • 6 tablespoons butter
  • 6 tablespoons all-purpose flour
  • 3 cups milk
  • 1 cup heavy cream
  • 1 tablespoon freshly ground black pepper
  • 1 pound white Cheddar, shredded
  • 4 ounces Romano, shredded
  • 4 ounces Asiago, shredded
  • 2 cups bread crumbs (suggested: panko (Japanese) available at most markets)
  • 2 tablespoons chopped fresh parsley, for garnish

Method

  1. Set your oven to heat to 160 degrees C.
  2. Boil a large pot of water with three pinches of salt, add the macaroni, and cook for about 8 minutes until al dente before draining.
  3. Melt the butter in a large saucepan, then whisk in the flour and cook for 2 to 3 minutes to form a roux.
  4. Pour in the cold milk, whisking well until smooth, and cook the sauce until it thickens and bubbles.
  5. Stir in the heavy cream, all the shredded cheeses, 1 tablespoon of salt, and 1 tablespoon of pepper, cooking until the cheeses have melted.
  6. Combine the cooked macaroni with the cheese sauce and transfer it to a 13 by 9 baking dish, sprinkling the bread crumbs over the top.
  7. Bake the dish in the oven for 12 to 15 minutes until the topping is golden brown, then garnish with fresh parsley to serve.
