3 Cheese Chicken Penne
This comforting pasta dish is inspired by a restaurant favourite. Marinated chicken is grilled and combined with penne pasta in a rich roasted garlic Alfredo sauce, then loaded with provolone, Parmesan, and mozzarella. It is finished with a fresh tomato and basil bruschetta mixture for a bright contrast. Using a jarred sauce makes for a convenient weeknight dinner. The recipe yields four generous servings.
Ingredients
- 1 teaspoon fresh basil leaf, sliced thin
- 2 roma tomatoes, small diced
- 1 garlic clove, pressed
- 1/4 teaspoon salt
- 1/2 teaspoon olive oil
- 1 lb chicken breast
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1/2 teaspoon Italian spices
- 5 button mushrooms, sliced
- 1 tablespoon purple onion, very thin sliced (optional)
- 1 (16 ounce) jar roasted garlic alfredo sauce
- 2 ounces provolone cheese (chopped up in little pieces or shredded)
- 2 ounces grated parmesan cheese
- 2 ounces mozzarella cheese (cut into little pieces or shredded)
- 2 teaspoons olive oil
- 1/2 lb penne pasta (cooked according to box directions)
Method
- Combine 2 tablespoons lemon juice, 1 tablespoon olive oil and the Italian spices, then pour this over the chicken in a bag or container. Allow it to marinate for 30 minutes or up to a few hours.
- Prepare the bruschetta mixture by combining all its ingredients. Cover and refrigerate until you are ready to serve.
- Heat your grill and cook the marinated chicken until it is fully cooked through. Begin cooking the penne pasta in a separate pot as per the packet instructions.
- While the pasta cooks, heat 2 teaspoons of olive oil in a large, heavy skillet. Cook the sliced mushrooms and optional onion until they become tender, then remove the skillet from the heat.
- Pour the entire jar of roasted garlic Alfredo sauce into the skillet with the mushrooms. Add the drained, cooked pasta and stir to combine.
- Once the chicken is ready, slice it and add all of it to the skillet, mixing everything together.
- Warm the contents of the skillet until nearly bubbling. Add the provolone, Parmesan, and mozzarella cheeses, stirring until they melt and blend into the sauce.
- Divide the cheesy pasta and chicken among serving bowls. Top each portion with the chilled bruschetta mixture.
- This meal pairs wonderfully with garlic bread or breadsticks on the side.
