3 Cheese Chicken Enchiladas
These satisfying enchiladas are a classic Mexican one dish meal, perfect for a family dinner. Shredded chicken is combined with cream cheese, sour cream, and a blend of spices, then rolled in flour tortillas. Coated in a flavourful enchilada sauce and topped with plenty of Monterey Jack and cheddar cheese, they bake until golden and bubbling. This recipe serves four to six people and takes just 40 minutes from start to finish.
Ingredients
- 8 flour tortillas
- 10 ounces enchilada sauce
- 4 ounces cream cheese
- 3/4 cup sour cream
- 1/4 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/4 teaspoon pepper
- 2 cups shredded chicken
- 2 cups shredded monterey jack cheese, divided
- 1 cup shredded cheddar cheese
Method
- Preheat your oven to 350 degrees.
- Combine the cream cheese and sour cream in a large bowl, mixing until you have a smooth consistency.
- Mix in the ground cumin, salt, and pepper.
- Fold in the shredded chicken, one cup of the Monterey Jack cheese, and all of the cheddar cheese.
- Lightly coat each flour tortilla by dipping it into the enchilada sauce.
- Spoon a portion of the chicken and cheese filling onto the centre of each tortilla and roll it up.
- Arrange the filled tortillas in a lightly greased 13x9 baking dish with the seam side facing down.
- Pour the rest of the enchilada sauce over the top of the rolled tortillas.
- Bake the dish in the oven for 25 minutes.
- Remove from the oven, scatter the remaining cheese over the top, and bake for another 3 minutes.
