3 Cheese Artichoke Bites

Ingredients

  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1 tablespoon oil
  • 2 (6 1/2 ounce) jars marinated artichokes, drained and chopped
  • 6 eggs, beaten
  • 1 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 1/2 teaspoon italian seasoning
  • 1/4 cup fresh parsley, chopped
  • 1/4 teaspoon pepper
  • 1/8 teaspoon Worcestershire sauce
  • 1/8 teaspoon hot pepper sauce
  • 1/4 cup Italian seasoned breadcrumbs
  • additional fresh parsley, chopped

Method

  1. Cook the chopped onion and minced garlic in oil in a skillet until tender, then drain and set this mixture aside.
  2. In a large bowl, combine the chopped artichokes, beaten eggs, shredded Cheddar, shredded mozzarella, grated Parmesan, Italian seasoning, chopped parsley, pepper, Worcestershire sauce and hot pepper sauce, mixing everything thoroughly.
  3. Stir the cooked onion and garlic mixture along with the Italian seasoned breadcrumbs into the large bowl of ingredients.
  4. Spoon the combined mixture into greased mini muffin cups, filling each one about two-thirds full.
  5. Bake at 325 degrees for 15 to 20 minutes, until the bites are firm and have turned a golden colour.
  6. Serve the bites warm, optionally sprinkling them with additional chopped fresh parsley.
