3 Cheese Artichoke Bites
These tasty mini bites are packed with a blend of three cheeses and marinated artichokes. The mixture is baked in mini muffin tins until golden and firm, creating a savoury and scrumptious finger food ideal for any gathering. They are quick to prepare and best served warm, optionally garnished with fresh parsley.
Ingredients
- 1 onion, chopped
- 1 garlic clove, minced
- 1 tablespoon oil
- 2 (6 1/2 ounce) jars marinated artichokes, drained and chopped
- 6 eggs, beaten
- 1 cup cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
- 1/2 teaspoon italian seasoning
- 1/4 cup fresh parsley, chopped
- 1/4 teaspoon pepper
- 1/8 teaspoon Worcestershire sauce
- 1/8 teaspoon hot pepper sauce
- 1/4 cup Italian seasoned breadcrumbs
- additional fresh parsley, chopped
Method
- Cook the chopped onion and minced garlic in oil in a skillet until tender, then drain and set this mixture aside.
- In a large bowl, combine the chopped artichokes, beaten eggs, shredded Cheddar, shredded mozzarella, grated Parmesan, Italian seasoning, chopped parsley, pepper, Worcestershire sauce and hot pepper sauce, mixing everything thoroughly.
- Stir the cooked onion and garlic mixture along with the Italian seasoned breadcrumbs into the large bowl of ingredients.
- Spoon the combined mixture into greased mini muffin cups, filling each one about two-thirds full.
- Bake at 325 degrees for 15 to 20 minutes, until the bites are firm and have turned a golden colour.
- Serve the bites warm, optionally sprinkling them with additional chopped fresh parsley.
