3 C Crock-Pot Casserole (Chicken, Cheese & Cauliflower)

Ingredients

  • 2 lbs boneless skinless chicken thighs or 2 lbs chicken breasts
  • 1 head cauliflower, cut into pieces
  • 1 (10 3/4 ounce) can condensed cheddar cheese soup
  • 1/4 cup chicken broth
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon hot sauce (about 3-4 shakes)
  • 1/4 cup heavy cream
  • 1 cup shredded cheddar cheese

Method

  1. Chop the chicken into bite-sized pieces. Lightly spray the interior of your crock pot with cooking oil.
  2. Place the chicken chunks and cauliflower pieces into the prepared pot.
  3. Add the condensed cheddar cheese soup, chicken broth, salt, onion powder, black pepper, and hot sauce to the pot. Do not add the heavy cream or shredded cheddar cheese at this stage.
  4. Stir all the ingredients in the pot until they are well combined.
  5. Put the lid on the crock pot and set it to cook on the low setting for 8 hours.
  6. Once the cooking time is complete, open the lid and pour in the heavy cream. Add the cup of shredded cheddar cheese.
  7. Stir the cream and shredded cheese thoroughly into the hot casserole until the cheese has melted and the sauce is smooth and creamy.
  8. The casserole is now ready to be served directly from the pot.
