3 Beet High & Rising Cocktail
This cocktail uses beet juice to add earthy sweetness and a rich colour, complementing the berry notes of pomegranate soda and gin. A touch of vanilla and lemon juice balances the flavours, while an egg white creates a luxurious frothy texture. The drink is shaken and served in a chilled glass without ice, making it a sophisticated aperitif. It takes just 5 minutes to prepare one serving.
Ingredients
- 1 1/2 ounces gin
- 2 drops vanilla extract (be careful, don't add more!)

- 1/2 ounce beet juice
- 1/2 ounce fresh lemon juice
- 1 egg white, or 3/4 ounce aquafaba
- 2 1/2 ounces chilled pomegranate soda (such as Izze)
Method
- Place the gin, vanilla extract, simple syrup, beet juice, lemon juice and egg white into a cocktail shaker.
- Seal the shaker and shake the contents for about 10 seconds without using any ice to emulsify them.
- Add ice to the shaker, seal it again and shake vigorously for approximately 30 seconds until the mixture is very cold and frothy.
- Use a double strainer to pour the drink into a chilled 12 ounce collins glass.
- Allow the foam to settle for a moment.
- Gently pour the chilled pomegranate soda into the glass until the foam rises above the rim.
