This is a copycat recipe for a well-known fast food chain's three bean salad. The sweet and sharp dressing perfectly coats the beans and vegetables. It is a fantastic dish for those who are not typically bean lovers. The flavours develop and become more delicious the longer it is left to marinate in the fridge. You can easily omit the green pepper if preferred. It makes a great side dish for gatherings.

3 Bean Salad

Ingredients

  • 1/2 cup vegetable oil
  • 1/2 cup cider vinegar
  • 3/4 cup sugar
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 (15 ounce) can cut green beans (drained)
  • 1 (15 ounce) can cut wax beans (drained)
  • 1 (15 ounce) can dark red kidney beans (drained and rinsed)
  • 1 medium green pepper (chopped)
  • 1 medium white onion (chopped)

Method

  1. Combine the oil, vinegar, sugar, salt, and pepper in a medium bowl, whisking them together thoroughly.
  2. Add the drained green beans, wax beans, kidney beans, chopped green pepper, and chopped onion to the bowl, stirring to ensure everything is well coated in the dressing.
  3. Transfer the mixture to a container with a lid and place it in the refrigerator to chill overnight.
  4. To serve, use a slotted spoon to lift the salad from the dressing and transfer it to a dish.
