3 Bean Salad
This is a traditional three bean salad featuring a sweet and sour dressing made from sugar and apple cider vinegar. It combines canned green beans, yellow wax beans, and kidney beans with diced green pepper. The simple method involves mixing all components before chilling. The salad benefits from resting for several hours to allow the flavours to blend thoroughly, making it an ideal make-ahead dish for gatherings. It yields enough for eight servings.
Ingredients
- 1 (15 ounce) can green beans
- 1 (15 ounce) can yellow wax beans
- 1 (15 ounce) can kidney beans
- 1/2 cup diced green bell pepper
- 3/4 cup sugar
- 2/3 cup apple cider vinegar
- 1/3 cup vegetable oil
- 1 teaspoon salt
- 1 teaspoon pepper
Method
- Drain the liquid from all the cans of beans.
- Combine the drained beans with the diced green bell pepper in a large mixing bowl.
- In the same bowl, add the sugar, apple cider vinegar, vegetable oil, salt, and pepper.
- Mix all the ingredients together until they are well combined.
- For the best results, cover the bowl and refrigerate the salad for at least 6 hours before serving to let the flavours meld.
