Country Ham Bacon (And Eggs)
This recipe transforms salt-cured country ham into a delicious bacon alternative for breakfast. The process involves simmering the ham to reduce its saltiness before frying it until browned. It is served with creamy scrambled eggs, gently cooked with butter and seasoned with garlic powder and pepper. Using a cast iron skillet is recommended for an authentic result. The method also accommodates using leftover baked ham.
Ingredients
- 12 ounces salt-cured smoked country ham steaks
- 2 cups water
- 1 tablespoon vegetable oil
- 1 tablespoon butter
- 6 eggs
- 1 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
Method
- Slice the ham into pieces roughly 3" in size, discarding any bone. It is fine if the pieces are uneven.
- For cured ham only, place the slices in a large cast iron pan. Cover them completely with about 2 cups of water, adding more if needed during cooking to draw out the salt.
- Simmer the ham for 10-15 minutes, turning the pieces occasionally. Remove the ham, then quickly rinse and wipe the skillet clean.
- Return the pan to the heat. Add 1 tablespoon of oil and the ham slices in a single layer. Fry for 10-20 minutes, turning until browned. Drain on paper towels. Cook in batches if required.
- For the eggs, melt 1 tablespoon of butter in a nonstick pan. Whisk 6 eggs with 1 teaspoon kosher salt, 1/2 teaspoon garlic powder, and 1/2 teaspoon black pepper. Pour into the pan and cook gently, stirring occasionally with a spatula.
- Once the eggs are nearly done to your liking, plate them immediately with the warm ham. Remember the eggs will continue to cook off the heat.
