This one dish meal is a lighter option for dinner. Chicken strips are marinated with mushrooms in a fat free Italian dressing before being cooked with onion, zucchini and tomato wedges. The dish is finished with pieces of low fat cheese which are left to melt over the warm ingredients. It serves four people and takes about 65 minutes to prepare and cook.

Ingredients

  • 1 lb chicken breast, cut in strips
  • 1 (2 1/2 ounce) jar sliced mushrooms, drained
  • 1/2 cup fat-free Italian salad dressing
  • 1/4 cup chopped onion
  • 2 tablespoons lowfat margarine
  • 1 medium zucchini, sliced (about 2 cups)
  • 1 large tomatoes, cut in wedges
  • 6 slices low-fat cheese, cut in small pieces

Method

  1. Put the chicken strips and drained mushrooms into a shallow dish.
  2. Pour the fat free Italian dressing over the chicken and mushrooms.
  3. Allow the mixture to marinate for 30 minutes.
  4. Drain the chicken and mushrooms, keeping the leftover dressing to one side.
  5. Cook the chopped onion in low fat margarine in a large skillet until it becomes tender.
  6. Add the drained chicken and mushrooms to the skillet.
  7. Cover the skillet and cook until the chicken is tender.
  8. Stir in the sliced zucchini, tomato wedges and the reserved marinade.
  9. Continue to cook and stir the contents until the zucchini is tender.
  10. Take the skillet off the heat.
  11. Scatter the small pieces of low fat cheese over the top of the cooked mixture.
  12. Cover the skillet and leave it to stand for 2 minutes so the cheese can melt.
