24 Hour Salad
This impressive layered salad is perfect for gatherings. Crisp iceberg lettuce and cauliflower are layered with savoury bacon and onion, then topped with a mixture of mayonnaise, sugar and parmesan cheese. The key is allowing it to chill overnight, which lets the flavours develop beautifully. Before serving, any excess liquid is drained off, resulting in a deliciously cohesive and flavourful dish that always earns compliments.
Ingredients
- 1 head iceberg lettuce
- 1 head cauliflower
- 1 lb bacon
- 1 medium white onion
- 1/3 cup white sugar
- 1 cup mayonnaise (Hellman's preferred)
- 1/2 cup grated parmesan cheese
Method
- Cook the bacon until crisp, then crumble it and set it aside.
- In a large bowl, build layers in this order: torn lettuce pieces, small cauliflower florets, chopped or sliced onion, and the crumbled bacon. Sprinkle the entire 1/3 cup of white sugar evenly over the top.
- Combine the mayonnaise and grated parmesan cheese, then spread this mixture over the salad to cover it completely.
- Seal the bowl first with plastic wrap, then cover it with a layer of aluminium foil.
- Place the salad in the refrigerator to chill overnight.
- Before serving, drain away any accumulated water from the bowl, toss the salad to mix, and then serve.
