24-Hour Copper Pennies
This is a traditional marinated carrot salad known for its sweet and piquant flavour. The carrots are cooked until just tender, then combined with sliced vegetables and a dressing made from tomato soup, vinegar, sugar, and seasonings. After a brief cook, the mixture is cooled and must be refrigerated for a full 24 hours to allow the flavours to develop fully, making it an excellent prepare-ahead side dish.
Ingredients
- 1 (10 ounce) can tomato soup
- 1 green pepper
- 1 onion
- 1 tablespoon Worcestershire sauce
- 2 teaspoons prepared mustard
- 1 cup sugar
- 1/2 cup wine vinegar
- 3/4 cup oil
- 1 teaspoon salt
- 2 lbs carrots (can use 2or 3 cans carrots)
- 1/2 cup celery
Method
- Slice the carrots into rounds and cook them until they are tender but still firm, then drain them.
- Thinly slice the onion, green pepper, and celery, then add these to the drained carrots.
- Pour in the remaining ingredients and cook the mixture for 5 minutes more. Allow it to cool completely before placing it in the refrigerator to marinate for 24 hours.
