21 Club Hamburger
This recipe is inspired by the famous 21 Club in New York City. It creates moist and flavourful hamburgers using lean ground beef mixed with aromatic herbs and spices like thyme, rosemary, coriander, and a hint of cayenne. An egg and optional olive oil add richness. The patties are chilled to firm up before being grilled or pan fried to your preferred doneness. Serve them on toasted buns for a satisfying meal.
Ingredients
- 2 lbs lean ground beef
- 1/4 cup yellow onion, minced
- 2 teaspoons fresh thyme, minced
- 1 teaspoon ground black pepper
- 1 teaspoon fresh rosemary, minced
- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground fennel
- 1/8 teaspoon cayenne
- 1 egg, lightly beaten
- 2 -3 tablespoons extra virgin olive oil (optional)
- kosher salt, to taste
- 4 hamburger buns, toasted
Method
- Combine the ground beef, minced onion, thyme, black pepper, rosemary, coriander, fennel, cayenne, beaten egg, and optional olive oil in a large bowl, mixing gently.
- Add kosher salt to taste. Separate the mixture into four equal parts and form each into a patty about 1" thick.
- Enclose each patty in plastic wrap and place them in the refrigerator to chill and become firm.
- Prepare your cooking surface: either a medium hot charcoal fire, a gas grill set to medium high, or a large cast iron skillet with a tablespoon of canola oil heated over medium high heat.
- Cook the burgers, turning them once, until they reach your desired level of doneness. This takes about 12 minutes total for medium rare.
- Place the cooked burgers onto the toasted hamburger buns and serve immediately.
