This speedy casserole delivers a complete meal in a single pan. Egg noodles and frozen peas are cooked together, then combined with flaked tuna. A creamy sauce, made with a butter and flour roux, chicken broth, evaporated milk and a splash of white wine, is stirred through the pasta mixture for a rich, comforting dish that is ready to eat immediately.

20-Minute Tuna Casserole

Ingredients

  • salt, to taste
  • 1 (12 ounce) package extra wide egg noodles
  • 1 cup frozen green pea
  • 1 (6 ounce) can light chunk tuna in water, drained
  • 2 tablespoons sweet butter
  • 3 tablespoons all-purpose flour
  • 1 3/4 cups chicken broth
  • 1 (12 ounce) can evaporated milk
  • 1/4 cup dry white wine

Method

  1. Bring 3 quarts of salted water to a boil in a 5- to 6-quart pan. Cook the egg noodles as directed on the packet. Add the frozen peas to the pasta for the final minute of cooking, until they are tender and bright green. Drain the noodles and peas and return them to the pan. Mix in the drained tuna.
  2. As the noodles cook, melt the butter in a 12- to 14-inch frying pan. Whisk in the flour to create a smooth paste and cook for about 1 minute. Combine the chicken broth and evaporated milk in a bowl. Add this liquid to the frying pan in small batches, whisking well after each addition until smooth. Stir in the white wine and cook the sauce for about 2 minutes until it thickens and simmers.
  3. Pour the finished sauce over the tuna and noodle mixture. Gently stir everything together until well combined. Serve the casserole straight away.
