20 Minute Skillet Salmon

Ingredients

  • 2 teaspoons oil
  • 4 salmon fillets
  • 3/4 cup skim milk
  • 125 g philadelphia light spreadable cheese with garlic and herbs
  • 1/2 cup cucumber, chopped
  • 2 tablespoons dill

Method

  1. Warm the oil in a large skillet. Place the salmon fillets in the pan and cook for five minutes on each side, or until the fish flakes easily with a fork. Take the salmon out, cover it, and set it aside to keep warm.
  2. Pour the skim milk into the same skillet and add the spreadable cheese. Stir continuously until the cheese has melted completely and the mixture is smooth. Mix in the chopped cucumber and fresh dill.
  3. Place the salmon fillets back into the skillet with the sauce to warm through. Alternatively, you can plate the salmon and spoon the warm cheese sauce over the top to serve.
