20 Minute Honey Granola
This straightforward granola recipe comes together quickly and is not overly sweet, making it a favourite for many. Baking it leaves a delightful scent in your home. For extra nutrition, you can stir in additions like wheat germ or brewer's yeast with the dry ingredients before mixing. The recipe yields about 6 cups, which is roughly 10 servings.
Ingredients
- 4 cups rolled oats
- 1/2 teaspoon salt
- 1 cup almonds (or other nuts, chopped)
- 1 tablespoon ground cinnamon
- 2 tablespoons ground flax seeds (optional)
- 1/3 cup oil (coconut oil works really well)
- 2/3 cup honey
- 1 teaspoon vanilla extract
Method
- Preheat your oven to 300 degrees.
- In a large bowl, mix together the rolled oats, chopped almonds, salt, cinnamon, and optional ground flax seeds.
- Take a smaller bowl and whisk the oil, honey, and vanilla extract together.
- Pour the liquid mixture into the dry ingredients and combine thoroughly, using your hands if needed.
- Divide the granola mixture between two cookie sheets that have been lined with foil or parchment paper, spreading it out evenly.
- Place the sheets in the oven and bake for 10 minutes, then take them out and give the granola a stir.
- Return the trays to the oven and bake for another 10 minutes, or until the granola takes on a light golden colour.
- Take the granola out of the oven and let it cool down fully on the sheets.
- Once completely cool, break up the granola and store it in an airtight container.
