20 Minute Honey Granola

Ingredients

  • 4 cups rolled oats
  • 1/2 teaspoon salt
  • 1 cup almonds (or other nuts, chopped)
  • 1 tablespoon ground cinnamon
  • 2 tablespoons ground flax seeds (optional)
  • 1/3 cup oil (coconut oil works really well)
  • 2/3 cup honey
  • 1 teaspoon vanilla extract

Method

  1. Preheat your oven to 300 degrees.
  2. In a large bowl, mix together the rolled oats, chopped almonds, salt, cinnamon, and optional ground flax seeds.
  3. Take a smaller bowl and whisk the oil, honey, and vanilla extract together.
  4. Pour the liquid mixture into the dry ingredients and combine thoroughly, using your hands if needed.
  5. Divide the granola mixture between two cookie sheets that have been lined with foil or parchment paper, spreading it out evenly.
  6. Place the sheets in the oven and bake for 10 minutes, then take them out and give the granola a stir.
  7. Return the trays to the oven and bake for another 10 minutes, or until the granola takes on a light golden colour.
  8. Take the granola out of the oven and let it cool down fully on the sheets.
  9. Once completely cool, break up the granola and store it in an airtight container.
