Hangover Breakfast Sausage and Egg Burger

Ingredients

  • 1 tablespoon mayonnaise
  • 1/2 teaspoon Sriracha
  • 1/2 teaspoon pure maple syrup
  • 1 sesame-seed hamburger bun
  • 1 lettuce leaf
  • 1 tomato slice
  • 3 to 4 thin rings red onion
  • 4 ounces bulk breakfast sausage
  • 1 teaspoon vegetable oil
  • 1 slice Cheddar
  • 1 large egg
  • Salt and freshly ground black pepper

Method

  1. Combine the mayonnaise, Sriracha and maple syrup in a small bowl. Spread this mixture onto the cut sides of both halves of the hamburger bun. Place the lettuce leaf, tomato slice and red onion rings onto the bottom bun.
  2. Shape the bulk breakfast sausage into a ball with your hands. Place it on a sheet of plastic wrap and press it flat to form a thin patty measuring 4 to 5 inches across.
  3. Warm the vegetable oil in a small nonstick skillet. Take the patty off the plastic wrap and cook it until it is browned on both sides and fully cooked, for about 3 minutes per side. Put the Cheddar slice on the patty, cover the skillet and heat until the cheese melts, roughly 30 seconds. Transfer the patty to the prepared bottom bun.
  4. Crack the large egg into the same skillet. Season it with salt and freshly ground black pepper. Cook until the egg white is set and crisp at the edges and the yolk remains runny, which takes 2 to 3 minutes. Place the cooked egg on top of the sausage patty and cover with the top half of the bun. Serve immediately.
