These speedy flatbread pizzas offer a clever shortcut for a satisfying Italian meal. Using ready-made Middle Eastern flatbreads as a base, they are topped with wilted spinach, grated Gruyère, and a cracked egg before baking. Finished with torn prosciutto, this recipe creates a flavourful main course for two, perfect for a weeknight dinner or lunch. The entire process takes only 20 minutes from start to finish.

Fiorentina Pizzas

Ingredients

  • 250g bag spinach
  • 2 large Middle Eastern flatbreads (if you can't get flatbreads, use ready-made pizza bases instead - tortillas are too thin for this topping and end up soggy)
  • pinch nutmeg
  • 2 eggs
  • 50g gruyère grated
  • 4 slices prosciutto torn

Method

  1. Set your oven to 200C/180C fan/gas 6. Put the spinach into a colander and pour boiling water over it to wilt the leaves. Allow it to cool slightly, then thoroughly squeeze out all the extra water.
  2. Lay the flatbreads on a baking tray. Distribute the spinach over them, leaving a clear space in the centre of each, and sprinkle with nutmeg and a little salt. Crack one egg into the middle of each flatbread, then top with the grated cheese and some ground pepper. Bake for 10 mins. Scatter the torn prosciutto over the pizzas right before you serve them.
