Cuban Style Black Beans
This recipe delivers a pot of richly seasoned Cuban style black beans. The base is a fresh mix of bell pepper, onion, cilantro, garlic and jalapeño, sautéed until soft. Canned black beans are added along with oregano, cumin, bay leaves and honey, then simmered for 15 minutes. A final splash of red wine vinegar brightens the dish. It makes a generous amount, ideal for a crowd or for meals throughout the week.
Ingredients
- 1 bell pepper (any color)
- 1 small onion
- 1/2 head fresh cilantro
- 2 garlic cloves
- 1 jalapenos or 1 chili pepper
- 2 tablespoons olive oil
- 3 (14 ounce) cans black beans
- 3/4 teaspoon salt
- 1 teaspoon oregano
- 1/2 teaspoon cumin
- 2 bay leaves
- 1 tablespoon honey
- 2 -3 tablespoons red wine vinegar
Method
- Chop the bell pepper and onion into large pieces. Put these into a food processor with the cilantro, garlic and halved jalapeño. Pulse the mixture until the vegetables are finely chopped but not puréed.
- Heat the olive oil in a medium stock pot. Cook the processed vegetables until they have softened, which should take about 5-8 minutes.
- Drain the liquid from two cans of black beans. Pour all three cans of beans, including the undrained one, into the pot with the vegetables.
- Mix in the salt, oregano, cumin, bay leaves and honey. Allow the beans to reach a gentle simmer and cook them for 15 minutes.
- Add 2-3 tablespoons of red wine vinegar to the pot and stir. Sample the beans and add more seasoning if needed.
