Chipotle Shrimp
This quick chipotle shrimp dish is ideal for busy evenings or casual gatherings. A vibrant marinade of honey, lime, garlic and spices coats the shrimp before they are grilled or broiled. Serve them in warm tortillas with suggested accompaniments like black beans, avocado and crema for a complete meal. The entire process takes just 25 minutes from start to finish.
Ingredients
- 3 tablespoons Country Crock® Spread, melted
- 3 tablespoons chopped fresh cilantro
- 2 tablespoons lime juice
- 2 tablespoons honey
- 2 cloves garlic, chopped
- 1 teaspoon ground cumin
- 0.25 teaspoon chipotle chili powder, or more to taste
- 0.5 teaspoon salt
- 1 pound large shrimp, peeled, deveined and tails on
Method
- In a non-aluminum dish, mix the melted Country Crock® Spread with the cilantro, lime juice, honey, garlic, cumin, chipotle chili powder, and salt.
- Set aside half of this Spread mixture. Place the shrimp in the dish with the remaining mixture and toss until evenly coated. Cover the dish and allow the shrimp to marinate for 10 minutes.
- Thread the shrimp onto skewers. Cook them on a grill or under a broiler, turning once and brushing with the reserved Spread mixture, for 5 minutes or until they become pink.
- Present the cooked shrimp in tortillas. You can optionally add black beans, Mexican crema, diced avocado, and extra chopped cilantro. Garnish with lemon or lime wedges if you like.
