20-Minute Chicken Parmesan
This speedy Italian classic delivers all the flavour of chicken parmesan in a fraction of the time. Chicken breasts are flattened, coated in seasoned breadcrumbs and pan-fried before being simmered in a rich spaghetti sauce. A final topping of mozzarella and parmesan cheese melts beautifully over the chicken, creating a comforting and satisfying dish that is ideal for a quick lunch or snack. It serves four people and takes only 25 minutes from start to finish.
Ingredients
- 4 boneless skinless chicken breast halves
- 1 large egg, lightly beaten
- 1/2 cup Italian seasoned breadcrumbs
- 2 tablespoons butter or 2 tablespoons margarine, melted
- 1 3/4 cups spaghetti sauce
- 1/2 cup shredded mozzarella cheese (2 ounces)
- 1 tablespoon grated parmesan cheese
- 1/4 cup chopped fresh parsley
Method
- Put each chicken breast between two pieces of heavy-duty plastic wrap and flatten them to a 1/4-inch thickness with a meat mallet or rolling pin.
- Coat each piece of chicken first in the lightly beaten egg and then in the Italian seasoned breadcrumbs.
- Heat the butter in a large skillet and cook the breaded chicken until it is browned on both sides.
- Pour the spaghetti sauce over the chicken in the skillet and allow it to come to a boil.
- Place a lid on the skillet, lower the heat and let the chicken simmer for 10 minutes.
- Top the chicken with the shredded mozzarella, grated parmesan and chopped fresh parsley, cover again and simmer for 5 more minutes until the cheeses have melted.
