20 Minute Chicken Parmesan

Ingredients

  • 4 skinless chicken breast halves (about 1 lb.)
  • 1 egg, slightly beaten
  • 1/2 cup seasoned bread crumbs
  • 2 tablespoons margarine or 4 butter
  • 1 1/2 cups Prego spaghetti sauce
  • 1/2 cup mozzarella cheese, shredded
  • 1 tablespoon parmesan cheese, grated
  • 1/2 cup fresh parsley, chopped

Method

  1. Flatten the chicken breast halves to an even thickness using the palm of your hand.
  2. Coat each piece by first dipping it into the slightly beaten egg, then into the seasoned bread crumbs.
  3. Heat the margarine in a skillet until hot, then brown the coated chicken on both sides.
  4. Pour the Prego spaghetti sauce over the chicken in the skillet.
  5. Lower the heat.
  6. Place a lid on the skillet and allow the chicken to simmer for 10 minutes.
  7. Scatter the shredded mozzarella, grated parmesan, and chopped fresh parsley over the chicken.
  8. Cover the skillet again and simmer for a further 5 minutes or until the cheese has fully melted.
