Prize-Winning Chili Con Carne
This celebrated chilli con carne recipe yields a deeply flavourful and rich dish. It combines ground beef and pork with a robust mixture of spices, including cocoa and beer, for a complex taste. The mixture simmers for over two hours to develop its full character before a final thickening step. The result is a hearty and satisfying chilli perfect for sharing.
Ingredients
- 2 1/2 lbs lean chuck, ground
- 1 lb lean pork, ground
- 1 cup onion, finely chopped
- 4 garlic cloves, finely chopped
- 1 (12 ounce) can Budweiser beer
- 8 ounces Hunts tomato sauce
- 1 cup water
- 3 tablespoons chili powder
- 2 tablespoons cumin, ground
- 2 tablespoons bouillon (or 6 cubes)
- 2 teaspoons oregano leaves
- 2 teaspoons paprika
- 2 teaspoons sugar
- 1 teaspoon unsweetened cocoa
- 1/2 teaspoon coriander, ground
- 1/2 teaspoon louisiana hot sauce (or to taste)
- 1 teaspoon flour
- 1 teaspoon cornmeal
- 1 tablespoon water
Method
- Brown half of the ground meat in a large saucepan or Dutch oven, then drain the fat and set the meat aside.
- Cook the remaining meat in the same pan, pouring off all but 2 tablespoons of the rendered fat.
- Introduce the chopped onion and garlic to the pan, cooking and stirring them until they become tender.
- Return all the meat to the pan and add every other ingredient except the flour, cornmeal and warm water, mixing everything thoroughly.
- Bring the mixture to a boil, then lower the heat, cover the pan and let it simmer for 2 hours.
- In a separate bowl, combine the flour and cornmeal, then stir in the warm water to create a smooth paste.
- Blend this paste into the chilli, cover the pan again and continue cooking for a further 20 minutes.
- Serve the finished chilli while it is hot.
