2 Point Banana Muffins
These banana muffins offer a lighter alternative using Splenda granular and skim milk. The recipe combines ripe mashed bananas with a creamed butter mixture and dry ingredients to create a simple batter. Ingredients
- 1/2 cup Splenda granular
- 5 tablespoons unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 cup skim milk
- 4 large bananas, ripe, mashed
Method
- Heat your oven to 350ºF.
- Cream the Splenda and softened butter together in a large bowl using an electric mixer until fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- Combine the flour, baking powder and baking soda in a separate large bowl. Mix half of this dry blend into the butter mixture, beating well.
- Pour in the skim milk and the rest of the flour mixture, beating to combine the batter before gently folding in the mashed bananas.
- Fill prepared muffin liners with the batter until they are about 3/4 full.
- Bake for about 20 to 30 minutes, until the muffins begin to brown and a tester inserted into the centre comes out clean.
- Let the muffins cool in their pan for about 2 minutes before taking them out.
