2 Point Banana Muffins

Ingredients

  • 1/2 cup Splenda granular
  • 5 tablespoons unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 cup skim milk
  • 4 large bananas, ripe, mashed

Method

  1. Heat your oven to 350ºF.
  2. Cream the Splenda and softened butter together in a large bowl using an electric mixer until fluffy.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. Combine the flour, baking powder and baking soda in a separate large bowl. Mix half of this dry blend into the butter mixture, beating well.
  5. Pour in the skim milk and the rest of the flour mixture, beating to combine the batter before gently folding in the mashed bananas.
  6. Fill prepared muffin liners with the batter until they are about 3/4 full.
  7. Bake for about 20 to 30 minutes, until the muffins begin to brown and a tester inserted into the centre comes out clean.
  8. Let the muffins cool in their pan for about 2 minutes before taking them out.
