2 Minute Scallops
This Australian recipe delivers a sophisticated seafood dish in just a few minutes. Good sized scallops are quickly seared before being coated in a glossy sauce made by deglazing the pan with white wine and marmalade. Ingredients
- 24 good sized scallops
- 1 dash white wine
- 1 tablespoon olive oil
- 1 tablespoon marmalade (I like ginger but any will do)
Method
- Place a sauté pan over heat with the olive oil.
- Cook the scallops for about 15 seconds on each side to sear them, then transfer to a warm plate.
- Pour the dash of white wine into the pan to deglaze it for about 10 seconds, then stir in the marmalade until the mixture starts to bubble.
- Drizzle the prepared sauce over the waiting scallops and finish with a garnish of fresh herbs such as tarragon, chives or coriander.
