This Australian recipe delivers a sophisticated seafood dish in just a few minutes. Good sized scallops are quickly seared before being coated in a glossy sauce made by deglazing the pan with white wine and marmalade. The result is a sweet and savoury combination perfect for a speedy yet impressive meal. A sprinkle of fresh herbs provides the final touch.

2 Minute Scallops

Ingredients

  • 24 good sized scallops
  • 1 dash white wine
  • 1 tablespoon olive oil
  • 1 tablespoon marmalade (I like ginger but any will do)

Method

  1. Place a sauté pan over heat with the olive oil.
  2. Cook the scallops for about 15 seconds on each side to sear them, then transfer to a warm plate.
  3. Pour the dash of white wine into the pan to deglaze it for about 10 seconds, then stir in the marmalade until the mixture starts to bubble.
  4. Drizzle the prepared sauce over the waiting scallops and finish with a garnish of fresh herbs such as tarragon, chives or coriander.
