2-Ingredient Dough Air Fryer Blueberry Bagels
These homemade bagels are created with a popular two-ingredient dough, featuring self-rising flour and Greek yogurt. Dried blueberries are plumped before being mixed into the dough, which is then shaped, glazed, and air fried until perfectly golden. The result is a batch of four warm, slightly sweet bagels, ideal for a special breakfast or snack. They require just 50 minutes from start to finish.
Ingredients
- 0.67 cup dried blueberries
- 1.25 cups self-rising flour
- 1 cup non-fat plain Greek yogurt (such as Fage® Total 0%)
- 1 large egg, beaten
- 1 teaspoon water
- 0.5 teaspoon cinnamon sugar
Method
- Put the dried blueberries into a small bowl and cover them with boiling water. Allow them to stand for 5 minutes before draining.
- In the bowl of a large stand mixer, combine the self-rising flour, Greek yogurt, and the drained blueberries. Fit the dough hook and mix on a low setting for approximately 3 minutes. If using a KitchenAid, select speed 3. The mixture will have a crumbly texture.
- Move the dough to a work surface dusted with flour. Separate it into 4 equal portions, then shape each into a ball. Press, stretch, and roll each ball into a rope roughly 8 inches long and 3/4-inch thick. Join the ends together, pinching to seal and form a bagel shape with a centre hole.
- Heat your air fryer to 280 degrees F (137 degrees C) for about 3 minutes. Whisk the egg with 1 teaspoon of water and brush this mixture over each bagel. Sprinkle the tops with the cinnamon sugar. Prepare the air fryer basket by lining it with a parchment liner or giving it a light coating of cooking spray.
- Arrange the bagels in the basket, ensuring they do not touch. Air fry them until they turn a golden brown colour, which should take 15 to 16 minutes. Avoid overcrowding and cook in two batches if needed. Note that cooking times can differ based on your air fryer's model and size.
- Transfer the cooked bagels to a wire rack. Let them cool for about 10 minutes prior to slicing.
