Two-Handed Kitchen Sink Tomato Sandwich
This recipe is a tribute to a simple, nostalgic sandwich. It comes from a gentleman who grew up enjoying it. The key is using perfectly ripe, chilled tomatoes and a generous spread of mayonnaise on soft bread. Ingredients
- 1 -2 large fresh picked vine ripened tomatoes
- 2 slices bread
- salt and pepper
- mayonnaise or Miracle Whip
Method
- During the height of tomato season, chill one very large or two medium sized, juicy, vine ripened tomatoes.
- Spread a layer of good mayonnaise, about 1/4 inch thick, onto two slices of bread.
- Place a layer of tomatoes, sliced to 1/4 inch thickness, onto one piece of the prepared bread.
- Season the tomato layer with salt and pepper according to your preference.
- Add a second slice of tomatoes and season once more with salt and pepper.
- Position the second slice of mayonnaise coated bread on top to complete the sandwich.
- Enjoy the sandwich immediately, ideally over the kitchen sink, as the tomato juices will be plentiful.
