This satisfying one pot chilli combines ground beef with two types of kidney beans, diced tomatoes, and a mix of classic seasonings. Ingredients
- 1 lb ground beef
- 1 tablespoon cooking oil
- 1/2 cup carrot, shredded
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon oregano
- 1 (19 ounce) can white kidney beans, drained and rinsed
- 1 (19 ounce) can red kidney beans, drained and rinsed
- 1 (28 ounce) can diced tomatoes, undrained
- 1 (10 ounce) can beef broth
- 1 (125 ml) can green chilies, undrained
- 1 cup frozen corn
- 1 cup cheddar cheese, shredded
Method
- Cook the chopped onion, shredded carrot, and minced garlic in the cooking oil until they are tender but still crisp.
- Brown the ground beef in a large, deep skillet, then drain away any excess fat.
- Transfer the cooked vegetable mixture and the seasonings, including the chilli powder, cumin, and oregano, to the skillet with the meat.
- Stir everything together and cook for 1 minute.
- Pour in all the remaining ingredients, except for the shredded cheddar cheese.
- Bring the mixture to a boil, then lower the heat and let it simmer for 20 minutes, stirring now and then.
- Ladle the chilli into bowls and top each serving with the shredded cheese.
