2 Bean Chili

Ingredients

  • 1 lb ground beef
  • 1 tablespoon cooking oil
  • 1/2 cup carrot, shredded
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1 (19 ounce) can white kidney beans, drained and rinsed
  • 1 (19 ounce) can red kidney beans, drained and rinsed
  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can beef broth
  • 1 (125 ml) can green chilies, undrained
  • 1 cup frozen corn
  • 1 cup cheddar cheese, shredded

Method

  1. Cook the chopped onion, shredded carrot, and minced garlic in the cooking oil until they are tender but still crisp.
  2. Brown the ground beef in a large, deep skillet, then drain away any excess fat.
  3. Transfer the cooked vegetable mixture and the seasonings, including the chilli powder, cumin, and oregano, to the skillet with the meat.
  4. Stir everything together and cook for 1 minute.
  5. Pour in all the remaining ingredients, except for the shredded cheddar cheese.
  6. Bring the mixture to a boil, then lower the heat and let it simmer for 20 minutes, stirring now and then.
  7. Ladle the chilli into bowls and top each serving with the shredded cheese.
