Ingredients

  • 1 cup dates, pitted and chopped
  • 1 cup boiling water
  • 1 tablespoon butter
  • 3/4 cup sugar
  • 1 egg
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup nuts, chopped

Method

  1. Place the chopped dates in a bowl with the boiling water and butter, then cover it and allow the mixture to cool.
  2. Prepare a loaf pan by greasing it thoroughly.
  3. Sift the flour, baking powder and salt together into a separate bowl.
  4. In another bowl, beat the sugar and egg together before adding this to the cooled date mixture, combining it alternately with the sifted dry ingredients.
  5. Toss the chopped nuts in a little flour to coat them, then fold them into the batter.
  6. Transfer the batter into the greased loaf pan and leave it to stand for 20 minutes.
  7. As the batter rests, heat your oven to 325°F.
  8. Bake the loaf in the preheated oven for 50 to 60 minutes.
  9. Remove the baked bread from the pan and place it on a rack to cool completely.
  10. For serving, slice the bread very thinly and spread with cream cheese or butter, as for sandwiches.
