Delicate White Cake
This classic cake is known as Delicate White Cake, though it bakes to a lovely light yellow colour. Its texture is exceptionally airy and soft, making it an ideal base for fresh fruit. The method involves creaming butter and sugar, folding in stiffly beaten egg whites, and baking in layer tins. It is traditionally finished with a simple strawberry filling between the layers. The entire process takes about 45 minutes to prepare and bake.
Ingredients
- 1/2 cup butter
- 1 cup sugar
- 2 cups flour
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 2/3 cup milk
- 1 teaspoon vanilla
- 4 egg whites
Method
- Set your oven to 350 degrees for a bake time of 30-35 minutes.
- Blend the butter and sugar together thoroughly until creamy.
- Sift the flour, baking powder and salt together, then incorporate this mixture into the creamed butter and sugar, alternating with additions of the milk.
- Stir in the vanilla flavouring.
- Whisk the egg whites until they form stiff peaks, then gently fold them into the prepared cake batter.
- Transfer the batter into two greased 9-inch layer pans and bake at 350 degrees for 30 to 35 minutes.
- For the filling, place fresh sliced strawberries between the cake layers. Chop the remaining berries and combine them in a bowl with 1 tsp of sugar, a tsp of water and a tbsp of strawberry jam.
